Quick and Easy Homemade Guacamole

Directions: Mash avocados with garlic and salt. Stir in remaining ingredients, adding tomatoes and mayonnaise if desired.


Great with tortilla chips or lightly toasted bread of choice!


Ingredients: 

  • 3 medium ripe avocados, peeled and cubed
  • 1 garlic clove, minced
  • 1/4 to 1/2 teaspoon salt
  • 1 small onion, finely chopped
  • 1 to 2 tablespoons lime juice
  • 1 tablespoon minced fresh cilantro
  • 2 medium tomatoes, seeded and chopped, optional
  • 1/4 cup mayonnaise, optional

Watermelon Slushie

Directions: Combine ice and watermelon into a blender.  Add sugar and salt.  Pour in lime juice.  Blend until smooth.


Ingredients: 

4 cups of cut seedless watermelon

10 ice cubes

1/3 cup fresh lime juice

1/4 cups white sugar

1/8 tsp white salt (optional)

Peanut Butter Kiss Cookies


Ingredients:  

1 cup of peanut butter

1 cup sugar

1 large egg (room temp)

1 tsp vanilla extract

Hershey chocolate kisses


Directions: Preheat oven to 350°. Cream peanut butter and sugar until light and fluffy. Beat in egg and vanilla.


Roll into 1-1/4-in. balls. Place 2 in. apart on ungreased baking sheets. Bake until tops are slightly cracked, 10-12 minutes. Immediately press 1 chocolate kiss into center of each cookie. 


Cool for 5 minutes before removing from pans to wire racks.

Melted Ham and Cheese Sliders

Directions: Cut the full 12 pack of Hawaiian Rolls in half, so that the entire top is completely separated from the bottom. 


Spread an even coat of mayonnaise on the entire bottom half of the rolls. Apply a layer of deli ham, then a layer of Swiss cheese, followed by a second layer of ham. Drizzle honey mustard on ham. Cover sliders with top half of Hawaiian Rolls. 


Lightly brush melted butter on top of rolls. Bake at 350 degrees for 10 minutes until cheese is melted and rolls are golden.  Cut, Serve and Enjoy!


Ingredients: 

12 pack of mini Hawaiian Rolls

2 pounds of thin sliced deli ham

1 pound of Swiss cheese

1/4 cup of honey mustard

1/4 cup mayonnaise

1/4 cup of salted or unsalted melted butter (optional)

Cranberry Almond Spinach Salad

Directions: Mix sugar, cider vinegar,  white wine vinegar, dried  minced  onion,  poppy seed and paprika together. Slowly whisk in canola oil.  In a large bowl toss spinach, cranberries, and green onions with dressing. Sprinkle with almonds


Ingredients: 

1/4 cup sugar, 1/4 cup canola oil

2 Tbsp cider vinegar, 2  Tbsp white wine vinegar, 1 Tsp dried minced onion, 3/4 Tsp poppy seed, 1/8 paprika

10 oz fresh baby spinach, 3/4 cup dried cranberries, 2 green (sliced) onions, 3/4 cup sliced (toasted) almonds
